    • Preparation – 5 Mins
    • Cook: 15 mins
    • Total: 20 mins

    • 3/4 lb fettuccini pasta
    • 1 lb large raw shrimp, peeled & deveined
    • 2 Tbsp unsalted butter
    • 1 Tbsp olive oil
    • 1/2 medium onion, finely chopped
    • 1 garlic clove, minced
    • 2 cups whipping cream
    • 1/3 cup shredded parmesan cheese
    • 1/3 cup white wine
    • 1/4 tsp black pepper, or to taste
    • 1/2 tsp Sea salt
    • 1/4 tsp paprika, or to taste
    • 1 Tbsp Parsley to garnish

    • Cook 3/4 pound pasta in a pot of boiling water with 1 tablespoon salt until al dente, according to package directions. Set aside after draining without rinsing.
    • Prepare the shrimp and sauce while the pasta is cooking. Season the shrimp with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon paprika. Now, put, 1 Tbsp oil in a large nonstick skillet over medium/high heat.
    • When the oil is hot, place the shrimp in a single layer and sauté for 2 minutes per side or until cooked well and no longer translucent. Transfer to a separate dish to avoid overcooking.
    • In the same heated skillet, melt 2 tablespoons butter and sauté the finely chopped onion until soft and golden (3-5 minutes), turning frequently.
    • Sauté for another minute or until the garlic is aromatic. Stir in 1/3 cup white wine and reduce until only 25% of the liquid remains.
    • Now, stir in 2 cups of cream, bring to a light boil, and cook for 2 minutes. Stir in 1/3 cup parmesan cheese until the sauce is creamy and smooth.
    • Allow it to come to a gentle simmer without boiling, then remove it from the heat and season it with salt, pepper, and paprika to taste.
    • Add the drained pasta and cooked shrimp to the sauce and mix until the noodles are evenly coated.
    • Serve in warm pasta bowls with an abundance of chopped parsley, additional parmesan cheese, and freshly cracked black pepper.

How to Store Leftover Shrimp and Pasta:

Cooked shrimp can be properly preserved for three to four days in the refrigerator. To extend its shelf life, it can be frozen for up to six months. Freeze in airtight sealed containers or durable freezer bags. You might also use heavy-duty aluminum foil or freezer wrap to wrap items tightly.

    Tips For Shrimp and Pasta:

    • Once the cheese has been added to the alfredo sauce, you should not boil the mixture, or the cheese and cream will separate.
    • Cooking frozen shrimp will result in a small amount of liquid escaping, but this can be easily reduced by simmering for a minute.
    • Remember to save roughly a cup of pasta water to use in the sauce; it’s very starchy and will help to thin it out.
    • Timing-wise, your pasta should be cooking as the shrimp are being sautéed. This makes it easier to transfer the pasta directly into the skillet, along with the shrimp and a substantial amount of pasta water.
    • If you dislike shrimp, you can substitute scallops or chicken. To make this dish vegetarian, omit the shrimp.
