    • 3/4 lb fettuccini pasta
    • 1 lb large raw shrimp, peeled & deveined
    • 2 Tbsp unsalted butter
    • 1 Tbsp olive oil
    • 1/2 medium onion, finely chopped
    • 1 garlic clove, minced
    • 2 cups whipping cream
    • 1/3 cup shredded parmesan cheese
    • 1/3 cup white wine
    • 1/4 tsp black pepper, or to taste
    • 1/2 tsp Sea salt
    • 1/4 tsp paprika, or to taste
    • 1 Tbsp Parsley to garnish

    Directions:

    • Cook 3/4 pound pasta in a pot of boiling water with 1 tablespoon salt until al dente, according to package directions. Set aside after draining without rinsing.
    • Prepare the shrimp and sauce while the pasta is cooking. Season the shrimp with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon paprika. Now, put, 1 Tbsp oil in a large nonstick skillet over medium/high heat.
    • When the oil is hot, place the shrimp in a single layer and sauté for 2 minutes per side or until cooked well and no longer translucent. Transfer to a separate dish to avoid overcooking.
    • In the same heated skillet, melt 2 tablespoons butter and sauté the finely chopped onion until soft and golden (3-5 minutes), turning frequently.
    • Sauté for another minute or until the garlic is aromatic. Stir in 1/3 cup white wine and reduce until only 25% of the liquid remains.
    • Now, stir in 2 cups of cream, bring to a light boil, and cook for 2 minutes. Stir in 1/3 cup parmesan cheese until the sauce is creamy and smooth.
    • Allow it to come to a gentle simmer without boiling, then remove it from the heat and season it with salt, pepper, and paprika to taste.
    • Add the drained pasta and cooked shrimp to the sauce and mix until the noodles are evenly coated.
